Okra in tomato sauce
Wine & oil daysPrep 40 minCook 45 minServes 4
When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.
Ingredients
Method
- Trim the okra caps without cutting into the pods. Toss with the vinegar and leave in the sun or a warm spot for 30 minutes, then rinse. This keeps them from going slimy.
- Soften the onion in the oil, add the tomatoes and simmer 10 minutes.
- Add the okra and enough water to just cover. Shake the pan gently; do not stir.
- Simmer covered for 30 minutes until tender, season and add parsley.
Tip. Shake the pan, never stir, so the pods stay whole.
Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
