When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.
Ingredients
Method
- Boil the beans 10 minutes, drain, then simmer in 2 litres (8 cups) of fresh water for 1 hour.
- Fry the onion, carrot and pepper in the oil, add the paprika off the heat.
- Add them to the beans with the tomatoes and simmer 25 minutes.
- Season and add the mint and savory at the end.
Tip. Served at the Bulgarian Christmas Eve table. The dried mint is what makes it Bulgarian.
Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
