Yellow split pea purée
Wine & oil daysPrep 5 minCook 50 minServes 6
When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.
Ingredients
Method
- Cover the split peas with 1 litre (4 cups) of water, bring to a boil and skim the foam.
- Add the onion and bay leaf and simmer for 40 to 50 minutes, stirring now and then, until mushy and thick.
- Remove the bay leaf, add salt, oil and lemon and blend until silky.
- Serve warm or cool with raw onion, capers, oregano and more oil.
Tip. For a strict day, skip the oil and finish with lemon and caramelized onions cooked in water.
Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
