Cypriot pumpkin and bulgur pies

Wine & oil daysPrep 45 minCook 35 minServes 12
When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.

Ingredients

Method

  1. Rub the oil into the flour and salt, then add water to make a soft dough. Rest 30 minutes.
  2. Mix the pumpkin, bulgur, raisins, onion, cinnamon, sugar, oil, salt and pepper.
  3. Roll the dough thin, cut circles, fill and fold into half-moons, pressing the edges with a fork.
  4. Bake at 190°C (375°F) for 30 to 35 minutes.

Tip. Sweet and savory at once, a Cypriot Lent tradition.

Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
