Spiced rice pudding for the Nativity
Any fast dayPrep 5 minCook 40 minServes 8
When to eat it. Served by Lebanese and Syrian Christians to celebrate a birth, and above all at the Nativity. It has no dairy, so it can be made ahead during the fast. No oil, wine or fish, so it fits even the strict weekdays of Lent.
Ingredients
Method
- Whisk the rice flour, sugar and spices into the cold water.
- Bring to a boil, stirring constantly, then simmer 25 to 30 minutes until thick.
- Pour into small bowls and chill.
- Cover with a thick layer of coconut and nuts.
Tip. The caraway gives it its warm brown colour.
Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
