When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.

Ingredients

Method

  1. Simmer the lentils in 1 litre (4 cups) water for 15 minutes until soft.
  2. Fry the onions in the oil until dark brown.
  3. Add the bulgur, cumin, half the onions and salt to the lentils. Cook on low 15 minutes until thick.
  4. Serve topped with the remaining onions.

Tip. A smoother, creamier cousin of mujaddara.

Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
