When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.

Ingredients

Method

  1. Fry the onions and cabbage in the oil for 20 minutes until soft and lightly browned. Add the tomato paste, herbs and seasoning. Cool.
  2. Layer half the filo, brushing each sheet with oil.
  3. Spread the cabbage, top with the remaining filo, brushing each sheet.
  4. Bake at 190°C (375°F) for 35 to 40 minutes.

Tip. Sauerkraut instead of fresh cabbage gives a tangier pie.

Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
