When to eat it. Fish roe. Greeks eat it on Clean Monday by custom, and the Russian typikon allows it on Lazarus Saturday.
Ingredients
Method
- Soak the bread in water and squeeze it out firmly.
- Blend the tarama and onion until smooth.
- Add the bread and blend again.
- With the motor running, add the oil in a thin stream, alternating with the lemon juice, until pale and fluffy.
Tip. By Greek custom it is eaten on Clean Monday with lagana bread. In Russian practice roe is allowed on Lazarus Saturday. Follow what your parish keeps.
Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
