Mushroom dumplings for Christmas Eve borscht
Wine & oil daysPrep 1 hCook 10 minServes 6
When to eat it. One of the twelve dishes of the Ukrainian Holy Supper on Nativity Eve, served floating in clear red borscht. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.
Ingredients
Method
- Knead the dough and rest 30 minutes.
- Fry the onion and mushrooms in the oil, add breadcrumbs and season. Cool.
- Roll the dough thin, cut 5 cm (2 inch) squares, put a little filling on each, fold into triangles and pinch two corners together into “little ears.”
- Boil 3 minutes after they float. Serve in borscht.
Tip. Use the mushroom soaking water in the borscht for a deeper taste.
Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
