Wine & oil daysPrep 10 minCook 30 minServes 4Plus 1 hour rising
When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.

Ingredients

Method

  1. Whisk the flour, water, yeast, sugar and salt into a smooth batter. Cover and let it rise for an hour.
  2. Stir in the oil.
  3. Pour a thin layer into a hot oiled pan, tilting to spread it.
  4. Cook until bubbly, flip and cook briefly. Serve with jam, honey or fried mushrooms.

Tip. Bubbly, lacy and as good as the dairy version.

Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
