When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.

Ingredients

Method

  1. Soften the onion and garlic in the oil, add the orzo and stir.
  2. Add the wine, tomatoes and water, season, and pour into a baking dish.
  3. Bake at 190°C (375°F) for 20 minutes.
  4. Stir in the shrimp and bake 8 to 10 minutes more. Add parsley.

Tip. Shrimp go in at the end so they stay tender.

Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
