When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.

Ingredients

Method

  1. Chop the greens, salt them and squeeze out the liquid.
  2. Fry the onions in some of the oil and mix with the greens, herbs, rice and seasoning.
  3. Layer filo with oil, add the filling, cover with more oiled filo.
  4. Bake at 180°C (350°F) for 50 minutes.

Tip. Every village has its own mix. Use whatever greens you can find.

Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
