When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.

Ingredients

Method

  1. Brown the onions in the oil for 10 minutes. Add the garlic.
  2. Add the vinegar, then the tomatoes, spices and 200 ml (¾ cup) water. Simmer 15 minutes.
  3. Add the cauliflower, cover and simmer 20 minutes until tender, shaking the pot.
  4. Season and rest before serving.

Tip. Stifado is all about the onions. Use as many as the cauliflower.

Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
