When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.

Ingredients

Method

  1. Whisk the oil, lemon, garlic, oregano, mustard, water, salt and pepper.
  2. Toss the potatoes in it in a roasting tin and spread in one layer.
  3. Roast at 200°C (400°F) for 1 to 1¼ hours, turning twice, until the liquid is absorbed and the edges are crisp.
  4. Add a splash of water if the tin dries out before they are tender.

Tip. They soak up the lemony liquid first, then crisp up in the oil.

Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
