When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.
Ingredients
Method
- Mix the potatoes and onions with half the oil, salt and pepper.
- Lay out 2 sheets of filo brushed with oil, spread a line of filling along one edge and roll into a long snake.
- Coil the rolls into an oiled round tin.
- Brush with oil and bake at 200°C (400°F) for 40 to 45 minutes.
Tip. Leftovers are even better cold the next day.
Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
