When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.

Ingredients

Method

  1. Knead the dough, cover and let it double, about an hour.
  2. Stew the cabbage, onion and carrot in the oil for 20 minutes until soft, then add the tomato paste and season. Cool.
  3. Divide the dough into 12, flatten each, fill, pinch closed and set seam down on a tray. Rise 20 minutes.
  4. Brush with strong sweet tea instead of egg and bake at 190°C (375°F) for 20 to 25 minutes.

Tip. Sweet tea gives the shiny brown top that egg wash would.

Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
