When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.

Ingredients

Method

  1. Mix the tomatoes, onion, herbs, salt and pepper and let stand 10 minutes.
  2. Add flour a spoonful at a time until you have a thick, sticky batter.
  3. Heat 1 cm (½ inch) of oil and drop in tablespoons of batter, flattening them slightly.
  4. Fry 2 to 3 minutes per side until golden. Drain and serve hot.

Tip. They need no egg at all, so they are fasting food as they are.

Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
