When to eat it. Baked for St. Phanourios on August 27, or whenever someone asks his help to find something lost. It is shared with at least seven people, with a prayer for the soul of the saint’s mother. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.

Ingredients

Method

  1. Whisk the oil, sugar and juice.
  2. Fold in the flour, baking powder, soda and spices, then the raisins and walnuts.
  3. Pour into an oiled tin.
  4. Bake at 180°C (350°F) for 45 to 50 minutes. Take a piece to church to be blessed.

Tip. Traditionally made with seven or nine ingredients.

Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
