When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.

Ingredients

Method

  1. Whisk the flour, yeast, sugar, salt and water into a thick sticky batter. Rise 1 hour until bubbly.
  2. Heat the oil to 175°C (350°F).
  3. Squeeze the batter through your fist and scoop off balls with a wet spoon into the oil. Fry until golden.
  4. Drain and drizzle with warm honey, cinnamon and walnuts.

Tip. The basic recipe has no egg or dairy at all, so they keep the fast as they are.

Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
