Ταχινόπιτα

Tahini and orange cake

Wine & oil daysPrep 15 minCook 45 minServes 12
When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.

Ingredients

Method

  1. Whisk the tahini and sugar, then the orange juice and zest, until smooth.
  2. Fold in the flour, baking powder, soda and cinnamon, then the nuts and raisins.
  3. Pour into an oiled 23 cm (9 inch) tin.
  4. Bake at 180°C (350°F) for 40 to 45 minutes, until a skewer comes out clean.

Tip. Tahini replaces both butter and eggs. Some treat tahini like oil, so keep it for oil days.

Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
