When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.

Ingredients

Method

  1. Fry the eggplant in half the oil until browned. Set aside.
  2. Fry the onions, peppers and potatoes in the rest of the oil for 10 minutes.
  3. Add the tomatoes and eggplant, cover and stew on low for 30 minutes.
  4. Stir in the garlic, herbs, salt and chili. Rest before serving.

Tip. Georgia’s answer to ratatouille. Best warm, not hot.

Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
