When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.

Ingredients

Method

  1. Brown the mushrooms in the oil.
  2. Add the spring onions, wine and 100 ml (scant ½ cup) water and simmer 15 minutes.
  3. Stir in the herbs, tkemali and garlic.
  4. Simmer 5 minutes and season with chili and salt.

Tip. Usually made with lamb at Pascha. The mushroom version keeps the fast.

Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
