Eggplant rolls with walnut paste

Wine & oil daysPrep 30 minCook 20 minServes 6
When to eat it. Made with oil. Keep it for days when wine and oil are allowed, like weekends in Lent and most of the Nativity Fast.

Ingredients

Method

  1. Salt the eggplant slices for 20 minutes, rinse and pat dry.
  2. Fry them in a little oil until soft and golden. Drain on paper.
  3. Grind the walnuts, garlic, spices, vinegar, cilantro and salt with a little water into a spreadable paste.
  4. Spread each slice with paste, roll up and top with pomegranate seeds.

Tip. A Georgian supra favourite that happens to be fasting food.

Fasting customs differ between churches and parishes. When in doubt, follow what your priest gives you. Not sure what today allows? Check the Orthodox calendar.
